LOW CARB FUDGY BROWNIE COOKIES

I've always thought Brownie mix is a must-have pantry staple, but today I realized am completely right!

I was watching a movie -a romantic one- and they were making cookies. Yes and I started drooling I could even smell them.

You must be thinking: that's an easy one, she has her own cookie mix or she has all the ingredients so how difficult can it be for Lili to make cookies when craving.

Well let me tell you something: Believe it or not, I didn't have a single bag of my cookie mix in my pantry (kids made them all and never told me we ran out of them). As far as the ingredients go, I do have all of them as I am always working and experimenting to create new products, but the whole point was: enjoying the cookies without leaving the Tv and the sofa for more than 20 minutes and even more so, without making such a big mess, measuring many ingredients and then the following clean up!

So I was looking into my pantry, craving for the cookies and there it was: my lifesaver: a beautiful proudly standing bag of Sugar Free, Gluten Free and Low Carb (yes KETO) BROWNIE MIX calling to be used! 

I wasn't sure about the outcome, as the Brownie mix is to make caky gooey brownies, even Chocolate cake but not made for cookie texture. However, why not trying?

I must tell you that I wasn't a big fan of double chocolate (chocolate dough and chocolate chips)  cookies as I super love the regular Chocolate Chip cookies, but these cookies exceded my expectations. Furthermore the stepped up to the highest level in my favorite cookies list!

Firm, Crispy still Fudgy, these Brownie Cookies were a hit - they didn't last 10 minutes, thanks God they only took 15 minutes to prepare- as my hubby and kids smell-came-ate all of them I even had to ask them to at least let me have 4 to satisfy my craving!

Good news is the recipe yield 20 cookies, so here we go with the easiest Brownie Cookie recipe ever:

What do you need to make Guilt free Brownie Cookies ?

Low Carb Sugar Free Lili's Gourmix Brownie Mix + egg + butter + sugar free chocolate chips 

Yep that's all! Oh and a bowl & Spatula or anything to mix - hands will do too; plus a baking sheet or sil-mat 

Beat the egg with butter add the Brownie Mix and  mix well, fold in chocolate chips shape cookies with your hands and place onto greased baking sheet, bake in the preheated oven for 10 min at 360 and let them cool after baking and before even touching them. Be patient!

making these Brownie cookies is a no brainer, However I feel obligated to share some tips with you:

  • Don't forget to preheat the oven while you mix the ingredients (this will save TV time and cookies will bake proud and loud)
  • always use softener butter or fat, never liquid
  • when first mixing dough will seem very dry, do not add liquid just keep on mixing and it will get the proper texture
  • bake them for 10 minutes and let them cool at least another 10 minutes. they will be so soft when taken out of the oven that you will think they are not done yet - Believe me- they are!
  • transfer or eat right from the tray when completely cooled as they will have the perfect texture at that moment.

Ingredients:

  • 2 cups Lili's Gourmix Brownie Mix
  • 1/3 cup softened butter -or fat of your choice
  • 1 egg
  • 1/2 cup sugar free chocolate chips

How to make them:

Preheat oven to 360

In a mixing Bowl, beat the egg with the butter, then add the brownie mix, mix well.  Finish with your hands and make small balls or shape cookies.

Place the cookies onto the baking sheet and bake for 10 minutes 

Take the cookies out of the oven and let them cool at east 10-15 minutes without touching them.
